When you think about your business, what are you most proud of?

It is a stage for small producers, projects that seek to recover the artisan tradition.

It is a place to find quality products in a friendly, unpretentious environment.

What is the history of your commerce?

Juan Camilo and I (Sara) had been wanting to open a physical outlet for our other project - La Noria Coffee Project - where we import speciality coffee from Juan Camilos farm and other small Colombian producers.

We decided to expand the offer of our shop to other artisanal products that also share this care for the raw material and the land, as well as the particularity of being limited editions. This is the case of natural wines, bean to bar chocolate and craft beers, among others.

In our shop we also offer takeaway coffee from La Noria Coffee Project and pastries from our dear neighbours Obrador de San Francisco.

Proximity, tradition and a lot of terroir, all under the name of PASTORA - a business with its own name, just like the ones we have always had.

What is your professional experience?

In addition to being half of PASTORA, Juan Camilo is a lawyer by profession and also has a coffee farm in Colombia where he produces specialty coffee and imports it to Spain under his project LA NORIA COFFEE PROJECT.

I am trained in Marketing & Communication and have worked for different companies, as well as being the owner of PASTORA.

How has covid 19 affected your business?

As a more shop-oriented business, we have not suffered much from the consequences of confinement.

The taste for consuming higher quality products and supporting small producers projects grew a lot as a result of COVID. We saw how people began to appreciate more the quality of the products they consumed inside and outside the home.

The experience that we used to get from going to a good restaurant or having a coffee outside, was now transferred to our home... this, in our case, benefited us.
